Five easy kids picnic ideas

Picnic season is here and the little ones will love helping to pack up the basket before tucking into tasty finger food – so, we have put together five easy kids picnic ideas to give you more time to focus on the fun!

Individual strawberry cheesecakes

Who said that dessert has to come last?! Whip up six of these delicious and summery individual strawberry and cream cheesecakes in just 30 minutes! 

Ingredients 

  • 1/2 Lemon, juice and zest of 
  • 200 g Craigies Strawberries 
  • 2 tbsp Strawberry conserve 
  • 75 g Caster sugar 
  • 8 Digestive biscuits 
  • 40 g Butter, unsalted 
  • 200 g cream cheese, full fat soft 
  • 200 ml Double cream, whipped 

Start by mixing the crushed biscuits and butter together in a bowl and divide them evenly between six small Kilner or screw-topped jars, pressing them down firmly with the back of a teaspoon. Leave them to chill in the fridge while preparing the filling. 

Next, place the soft cheese in a large bowl and beat in the sugar, lemon juice and zest until the mixture is smooth. Gently fold in the whipped cream then carefully spoon the filling over the biscuit bases. Now leave the jars to chill in the fridge for 2-3 hours. 

Mix the strawberries and the sieved conserve together in a small bowl, then spoon over the top of the cheesecakes. The cheesecakes will keep in the fridge for one day.

Afternoon tea
